Abstract:
PROBLEM TO BE SOLVED: To provide a method for drying pickles of a Japanese radish in which a drying time is shortened and a dried product of preferable texture can be obtained, and provide the dried product of the pickles of the Japanese radish.SOLUTION: A Japanese radish is dried by smoking every one piece after cutting off leaves. The Japanese radish dried and smoked is pickled in a pickled liquid for several months, so that the pickles of the smoked radish is made. The pickles of the smoked radish obtained as described in the above are cut into a desired size in a cutting step. The cut pickles are formed so that at least a length dimension in a fiber direction may become larger than the length dimension in an intersecting direction. The pickles of the Japanese radish cut in the cutting step are dried until a moisture content becomes 10% or less. The dried product of the pickles of the Japanese radish obtained as described in the above can be furthermore crushed by a crusher.SELECTED DRAWING: None
