To provide a method of manufacturing an oily component-containing microcapsule which is a method of encapsulating an oily component insoluble in a polysaccharide aqueous solution or a gelating agent aqueous solution by a gelated polysaccharide thin film in which the content of the oily component in the capsule is made uniform.

The method of manufacturing the oily component-containing microcapsule includes: a step of dispersing the gelating agent aqueous solution in the oily component to prepare a (W/O) primary dispersion system; a step of dispersing the (W/O) dispersion system in the saccharide aqueous solution to prepare a (W/O) secondary dispersion system; and a step of forming a gelated polysaccharide thin film on the surface of droplets of the oily component while keeping the (W/O) secondary dispersion system.
