To provide a method for efficiently producing an oil or fat-containing product containing a long chain highly unsaturated fatty acid or a long chain highly unsaturated fatty acid-containing oil or fat having a high added value by the use of a microorganism.
This method for producing the long chain highly unsaturated fatty acid is characterized by culturing a microorganism belonging to the genus Labyrinthula in a culture medium containing an oil, a fat or a fatty acid as a carbon source and then collecting the long chain highly unsaturated fatty acid from the culture product. Thereby, the oil or fat-containing product containing the ≥20C long chain highly unsaturated fatty acid having two or more unsaturated bonds, such as docosahexaenoic acid or the oil or fat containing the long chain highly unsaturated fatty acid can efficiently be produced from the vegetable oil or fat, the fatty acid, or the like. The present invention can be employed as a new oil or fat-modifying method for converting the vegetable oil or fat, or the like, into an oil or fat containing the long chain highly unsaturated fatty acid having a high added value.
