Abstract:

PROBLEM TO BE SOLVED: To provide packaged sterile pasta causing no unevenness in boiling up, specifically, causing no uneven moisture dots depending on portions in a container, having originally desired taste, palate feeling, or the like, and preventing the spoilage caused on the boiled pasta with the lapse of time.
SOLUTION: The packaged sterile pasta is obtained by the following process: charging a container with pasta and boiling water, repeatedly subjecting the pasta to pressurization and pressure discharge under the condition where water starts boiling when boiling up the pasta together with the container at an Fo value of 0.1-1.5 to finish boiling up the pasta, and thereafter, sealing the container in a sterile room.
