Abstract:
PROBLEM TO BE SOLVED: To provide a method of producing high-purity polyglycerol monofatty acid ester.SOLUTION: A method of producing polyglycerol monofatty acid ester is characterized in that polyglycerol, fatty acid, and fatty acid alkyl ester (where, the alkyl has 1-4 carbon atoms) are reacted with each other in the presence of secondary and/or tertiary alcohol and in the presence of Candida cylindracea-derived enzyme.
