Abstract:

To provide a method for producing steamed bread with light palate feeling after freezing and then steaming again, free from impairing appearance such as shrinkage or the like.

The invention relates to the method for producing steamed bread which steams bread after frozen state, comprising wheat flour, saccharides, a chemical leavening agent and 30-60 parts by mass of albumen powder per 100 parts by mass of sum of the wheat flour and starch.
