Abstract:

To realize the extraction of antiallergic components such as methylcatechin and its isomerized substances in a good efficiency in the production process of products, and thereby so as to perform the production of food materials containing much antiallergic components stably and in a good efficiency.

The method for producing antiallergic components comprises extracting the tea leaves of "Benifuuki", "Benifuji", "Benihomare", "Yaeho", "Surugawase", "Yutakamidori", "Hanayamidori", "Seisindaipan", "Seisin oolong", "Ohba oolong", "Benihikari", "Yamakai", "Yamatomidori", "Okumidori", or the like, at a high temperature to extract effective components in a good efficiency and also accelerating the thermal isomerization of various effective components.
