Abstract:

To provide an easy method for removing astringent taste which a cacao raw material having cacao mass and cacao powder as the main ingredients has.

This method for easily removing smell that an inexpensive cacao raw material has includes a process of mixing a cacao raw material having cacao mass and/or cacao powder as the main ingredients with a gallated catechin solution dissolved in an edible solvent to bring a solid weight of gallated catechin to 0.00005-0.003 time of a protein weight in the cacao raw material, a process of producing a reactant in the mixture thus obtained, and a process of removing the reactant thus produced.
