To provide a needle type pickle injector, etc., with which a pickle solution can be uniformly dispersed to pieces of raw material meat having various different shapes without causing waste and dispersion of injected amount even if difference in injection resistance resulting from parts of meat quality exists.
This needle type pickle injector is constituted of a transportation conveyor 1 capable of intermittently transporting raw material lump of meat, a volume measurement apparatus 2 capable of measuring the volume of the raw material lump of meat M in a fixed width, an apparatus 3 for hardness measurement, a weighing machine 4, an injection part 8 equipped with two injection heads 10 having a line of injection needles 9 which are arranged in the downstream side in the transportation direction of the volume measurement apparatus and inject the pickle solution to the raw material lump of meat in a fixed width and a program control part 11 which calculates the target injected amount and injection pressure of a liquid substance corresponding to the measured values of volume and hardness and can control the injected amount of the liquid substance in the raw material lump of meat in a fixed width to be an injected amount in a given range including the target injected amount.
