Abstract:
To obtain an oil and fat for coating giving excellent flavor and palatability to snacks without any oiliness and scarcely sticking the oil and fat to a packaging bag or hand.
This oil and fat for coating is obtained by adding 0-50 wt.% of an oil and fat or an extremely hardened oil having ≤20°C melting point measured by a heating method to 50-100 wt.% of a transesterified oil and fat and regulating the ratio of the triglyceride having 3 saturated fatty acid residues in the molecule and occupied in the whole triglyceride to 2-8 wt.%.
