Abstract:

PURPOSE: The titled saltless pickles having the same taste as that of ordinary pickles, having no bad influence on remedy even if patients of renal diseases requiring diet therapy eat them, obtained by immersing a food such as fish, vegetable, etc. in unrefined vinegar prepared by rice brewing.

CONSTITUTION: Firstly, a food such as fish, vegetable, etc. requiring preservation is pretreated by washing, cutting, etc., and the cell water of the food is primarily dehydrated by drying, etc. The food is then immersed in 2W3 times as much an immersing agent consisting essentially of unrefined vinegar prepared by rice brewing as the food, pressed and/or heat-treated, the cell water of the food is secondarily dehydrated, and the extract of the unrefined vinegar prepared by rice brewing is absorbed in the food, to give the desired pickles.
