Abstract:
To provide a poultry carcass breast meat cut-making device that can make a cut to a breast meat from a cervical spine end to a bevel side end, and prevents the meat quality from being degraded due to the biting of the bone collar into the breast meat.SOLUTION: A poultry carcass breast meat cut-making device includes: a holding member having a fitting part for internally fitting to a poultry carcass upper half bone-pleural cavity, and holding a poultry carcass upper half bone with the breast meat; a pair of first cut-making mechanisms coming close from both sides to the poultry carcass upper half bone with the breast meat, and making a cut from a side to the breast meat at a bevel side from the bone collar and from a first predetermined position of the bone collar vicinity to a cervical spine end; a pair of second cut-making mechanisms coming close from both sides to the poultry carcass upper half bone with the breast meat, and making the cut from the side to the breast meat at the bevel side from the first predetermined position and from a second predetermined position of the bevel vicinity to the bevel side end; and a pair of third cut-making mechanisms coming close from both sides to the poultry carcass upper half bone with the breast meat, and making the cut from the side to the breast meat from a third predetermined position of the bone collar side to a fourth predetermined position at the bevel side from the second predetermined position from the first predetermined position. The poultry carcass breast meat cut-making device operates in the order of the first cut-making mechanism, the second cut-making mechanism and the third cut-making mechanism.SELECTED DRAWING: Figure 2
