Abstract:

PURPOSE: To quickly and continuously prepare the titled food, by dipping a salt-containing food material in water in a specific insulating vessel and passing electric current through the food material while transferring the vessel in one direction, thereby effecting thermal aging and sterilization of the material.

CONSTITUTION: A pair of opposite electrodes 105, 105 are placed in an insulating vessel 104 containing an electrically conductive liquid B. A food material 101 uniformly containing proper amount of salt is submerged in the liquid B in the vessel. The insulating vessel 104 is placed on a transfer table 111 and is transferred in one direction by moving the transfer table 111. In the course of transfer of the vessel 104, an electric current is passed through the food material 101 between the electrodes 105, 105 via the electrically conductive liquid B to effect the thermal aging and sterilization of the material and obtain the objective processed food in a mass.
