Abstract:

PURPOSE: To easily, continuously and accurately prepare an electrically processed food using a conveyor system, by passing plural insulating container baskets each containing a food material successively through an electrically conductive liquid in submerged state using a suspending transfer rail, thereby effecting automatic thermal aging and sterilization by the action of electric current.

CONSTITUTION: Plural insulating container baskets 102 each containing a food material 101 are suspended from a suspension transfer rail 107 and successively passed through an electrically conductive liquid B filled in a insulating vessel 108 in submerged state. During the passage of the insulating container basket 102 through the electrically conductive liquid B, an electrode plate 105 attached to a side wall of the insulating container basket 102 is automatically brought into electrical contact with an opposite electrode 109 attached to the inner side wall of the insulating vessel 108. An electric current is uniformly passed through the food material 101 via the electrically conductive liquid B to effect the thermal aging and sterilization of the material with generated Joule's heat and to obtain the objective food.
