Abstract:

PURPOSE: To obtain an oil for roasting on hot plates having completely suppressed sputtering phenomenon, wherein oil drops fly away violently, without oil discoloration, by adding a specific amount of egg yolk lecithin to a liquid vegetable oil.

CONSTITUTION: A liquid vegetable oil is incorporated with 0.5W5 wt.% based on the oil of egg yolk licithin and, if necessary, an oleophilic food surfactant. The remarkably weakened surface tension between the vegetable oil and the moisture in the food suppresses the sputtering phenomenon, improves the operating efficiency, and reduces the risk in cooking. The oil will not be discolored even at a plate temperature above 180°C.
