Abstract:

PURPOSE: To prepare a snack-like cake having excellent palatability, with simplified process, by using whole or skinned beans or grains without pulverization, and processing the beans, etc. by a twin-screw extruder.

CONSTITUTION: The beans used in the present process are those which can be texturized and expanded easily by extrusion cooking, e.g. dried adzuki bean, kidney bean, pean, cowpea, broad bean, gram, green peas, etc. There is no particular restriction in the grain, and rice, wheat, millet, corn, etc. can be used. The raw material is if necessary, hydrated to a water-content of 8W50%, and processed at high temperature and pressure in a twin-screw extruder to obtain the objective snack-like cake. The barrel temperature of the extruder is 90W 250°C and the retention time of the material is about 10W90sec.
