Abstract:

PURPOSE: To obtain cocoa powder having rich taste and flavor and free of powdery taste, or to obtain a cacao butter free from alkali smell, in high yield, by treating cacao mass or cocoa powder with an alkali and extracting with hot water.

CONSTITUTION: The objective product can be obtained by mixing (A) cacao mass treated with an alkali such as the (bi)carbonate, hydroxide, etc. of ammonia, magneisa, soda, potash, etc. or cocoa powder obtained by the partial oil-expression of cacao mass, uniformly with (B) hot water of 70W130°C to dissolve the water-soluble components of the component (A), and extracting a component containing the water-soluble components and fine powder from the mixture.

EFFECT: The cacao butter can be applied for the production of chocolate without any pretreatment.
