Abstract:

PURPOSE: To obtain processed peanuts having improved color and luster of the outer shell of peanuts and taste, flavor, feeling to the palate and softness of the nuts without causing the generation of toxin by fungus, by heat-treating fresh peanuts and quickly freezing the product.

CONSTITUTION: Carefully selected peanuts of a specific variety such as improved medium-grain peanut with white outer shell and having a ripening degree of nut of about 80% is quickly heat-treated with pressurized hot steam (e.g. at 1.2t and 110°C for 30W35min) until the peanuts are still fresh. The heat-treated product is quickly frozen to obtain the objective processed peanuts.
