Abstract:
PURPOSE: To provide a method for efficiently synthesizing an Amadori compound.
CONSTITUTION: The objective producing method of an Amadori compound (1-amino-1-deoxy-2-ketose) comprises making hydroxyl group at 1-position in 2-ketose to trifluoromethane sulfonate, adding amino acid in the presence of secondary amine or tertiary amine, or oxidizing the hydroxyl group to make an aldehyde, and deprotecting the resultant adduct.
