Abstract:

PURPOSE: To obtain a cacao flavor drink containing a fragrant component of characteristic cacao beans, having excellent shelf stability, by extracting a cacao composition from roasted and ground cacao beans by using an aqueous medium.

CONSTITUTION: A cacao component is extracted from roasted and ground cacao beans by using an aqueous medium to give the objective drink. Cacao beans generally known as a raw material of chocolate, manufactured in Ecuador and Ghana, may be cited as the cacao beans used. Soluble solid content of cacao beans extracted is made preferably 5-20wt.% based on cacao beans. Namely, when the content is <5wt.%, extraction is insufficient and the drink has tendency of poor cacao flavor. On the contrary, when the content exceeds 20wt.%, the drink is liable to separate and precipitate.
