Abstract:

PURPOSE: To obtain a chocolate capable of being readily discharged from a mold, having a preferable luster, and free from the generation of bloom for a long period by adding cocoa butter-containing powder to a chocolate liquid under a specific condition, mixing the materials and subsequently molding the mixture.

CONSTITUTION: Cocoa butter-containing powder containing the cocoa butter in an amount corresponding to 0.02-1.0wt.% of a chocolate liquid is added to a melted chocolate liquid at 26.5-32.5°C. The materials are mixed, charged into a mold, molded and subsequently cooled into the solid molded product.
