Abstract:

PROBLEM TO BE SOLVED: To obtain a citrus fruit juice or fruit juice drink which scarcely contains precipitates, has excellent texture and taste, and is useful for health drinks, medicines, and the like, by adding a hesperidin glycoside to a citrus juice or fruit juice drink and then heating the mixture to dissolve flavonoid compounds contained therein.
SOLUTION: This production of the citrus fruit juice and fruit juice drink comprises adding a hesperidin glycoside to a citrus fruit juice or a fruit juice drink comprising the juice of one or more kinds of citrus fruits such as orange or Citrus unshiu, and then heating the mixture to dissolve flavonoid compounds, such as hesperidin, naringin and neohesperidin, contained therein. In order to obtain the fruit juice or fruit juice drink having the original taste, smell, color and the like of the citrus fruit, it is preferable to heat the mixture at 95°C for several seconds to about 10 minutes.
