Abstract:

PURPOSE: To obtain dietary fiber having excellent palatability without deteriorating the taste and flavor of raw material by immersing a dietary fiber raw material originated from the outer skin of grains, etc., in an organic solvent to effect the extraction and removal of soluble components, partially hydrolyzing the product and washing the hydrolyzate with water to remove disagreeable taste and smell.

CONSTITUTION: A dietary fiber raw material originated from the outer skin of grains or beans such as corn, barley or soybean is immersed in an organic solvent such as hexane or ethanol to extract and remove soluble components from the material. The treated raw material is partially hydrolyzed to an extent to get a recovery of 40-80wt.% after hydrolysis and the product is washed with water to obtain the objective dietary fiber. Various drinks and foods such as baked cake and bread having excellent palatability can be prepared by including 1-90wt.% of the fiber into the drinks, etc.
