Abstract:

PURPOSE: To provide a method for producing an α-glucosylstevia extract in which an enzyme is readily treated after the reaction; the reaction time is short; the continuous production can be carried out for a long period and the rate of reaction of a stevioside is higher than that of a conventional method.
CONSTITUTION: This method for producing a stevia sweetener containing a highly sweet saccharide added thereto with an immobilized enzyme composed of an α-glucosylster via extract is characterized by carrying out the α- glucosylation by using an immobilized enzyme prepared by immobilizing a cyclodextrin glucosyltransferase on a carrier which is a basic ion exchange resin having primary amine as an ion exchange group in a parent body of a glycidyl ester polymer of an unsaturated carboxylic acid with glutaraldehyde as a cross-linking agent.
