Abstract:

PURPOSE: To produce a pseudo-food to imitate various natural foods, preservable for a long period, having desired elasticity, hardness to masticate and pleasantness to the palate, by using a gelatinization reaction between an alginate and a calcium-containing metallic salt.

CONSTITUTION: One or several materials of wheat flour, starch, soybean protein, glair, gelatin, etc., as a raw material, is blended with a given amount, usually about 1W10wt% alginate, preferably sodium alginate. Then, the raw material blend is sufficiently kneaded with water, formed into a given shape, extruded from a nozzle, then immersed in a reaction solution of metallic salt containing calcium such as aqueous solution of calcium lactate, calcium chloride, etc., and taken out from the reaction solution after a given time.
