Abstract:
PURPOSE: Vegetables or fruits are dipped in hot oil and dehydrated under reduced pressure, then oil is removed and the vegetables or fruits are crushed to permit the long-term storage of them.
CONSTITUTION: Animal or vegetable oil is heated up to about 60W90°C and vegetables or fruits are dipped in the hot oil. At first, (i) the pressure is reduced down from the ambient one to minus 10W20mmHg for 30min, then to about minus 740W750mmHg for 60min. Then, the dehydrated product is squeezed or centrifuged to remove oil and treated with n-hexane to eliminate oil completely. Finally, the product is crushed to give a powder of fruits or vegetables which can be stored for a long period of time.
