Abstract:
PURPOSE: To produce easily drinkable SAKE having a mild and nice taste, by using special water as water for SAKE brewing.
CONSTITUTION: SAKE produced by crushing trees grown in alkaline soil, adding the resultant chips, e.g. chips of KAYUMERA containing about 3.8% water, about 0.9% protein, about 59.9% fiber material, about 0.9% ash, about 34% glucide, etc. to drinkable water to form water of about 5.8pH assuming red color, and fermenting a raw material (a mixture of rice KOJI with steamed rice, water, etc.) with the resultant water.
