Abstract:
To provide yeast richly containing taurine whose fungus body contains taurine at a high concentration: and to provide a method for producing the yeast as such a safe resource of taurine as to be applicable to food or feed.
The method for producing yeast richly containing taurine comprises the following process: suspending yeast in a solution containing taurine at a concentration of ≤9% (w/v); and nonproliferatively steering or shaking the solution so as to contain the taurine at a concentration of 12% (w/w) based on a dry fungus body. The method comprises regulating the concentration of the taurine in the solution so as to properly regulate the amount of the taurine taken into the fungus body.
