PURPOSE: To obtain a method for producing aseptic cooked rice without requiring a rice cooker in which the cooked rice can be heated with hot water for some ten min in a microwave oven and directly eaten.
CONSTITUTION: Immersed drained rice 3 and, as necessary, water 4 in an amount suitable for cooking rice are housed in each rice cooking container 2, equipped with an opening 1, formed by using a material capable of withstanding rice cooking and having shape retaining properties in a clean room (A). This rice cooking container 2 is transferred with a conveyor and introduced into a rice cooker or pressurizing vessel 5 capable of simultaneously cooking the rice in the plural containers 2 to carry out the cooking of the rice. The resultant rice cooking containers in an intact state of the cooked rice are then taken out of the rice cooker or pressurizing vessel 5 and directly introduced into a hermetically sealing packaging machine 7 without transferring the cooked rice 6 from rice cooking containers 2. A bacteriostatic gas such as nitrogen gas or gaseous carbon dioxide gas or a mixed gas thereof is then introduced into the rice cooking containers 2 go replace air in the rice cooking containers 2 with the bacteriostatic gas as much as possible. In a state of the rice cooking containers 2 filled with the bacteriostatic gas, the openings 1 of the rice cooking containers 2 are hermetically sealed with a suitable means in the hermetically sealing and packaging machine 7 and the hermetically sealed rice cooking containers 2 are taken out of the hermetically sealing and packaging machine 7 to the outside of the clean room (A) to mass-produce the objective aseptically packed cooked rice.
