Abstract:
[Problem] To provide a chocolate for a frozen dessert suitable for production when combined with a frozen dessert, and having good hardness, a good flavor, and good meltability in the mouth. [Solution] This chocolate for a frozen dessert contains 15 mass% or more of cacao, 3-9 mass% of cocoa butter, and 43-50 mass% of an oil/fat. The oil/fat contained in the chocolate satisfies the following conditions (a) to (c). (a) The oil/fat contains 10 mass% or less of a linear saturated fatty acid having 14 or less carbon atoms as a constituent fatty acid. (b) The oil/fat contains 10-25 mass% of a linear saturated fatty acid having 16 to 18 carbon atoms as a constituent fatty acid. (c) The oil/fat contains 65-85 mass% of an unsaturated fatty acid as a constituent fatty acid.
