Abstract:
A composition having mogroside sweetness and flavor and a preparation method therefor and an application thereof. The composition comprises at least among fructus momordicae aromatic volatile oil, fructus momordicae sweet-aroma decolorized concentrated juice, fructus momordicae pure-flavor decolorized concentrated juice and a mogroside sweetness ingredient, the fructus momordicae sweet-aroma decolorized concentrated juice, the fructus momordicae pure-flavor decolorized concentrated juice and the mogroside sweetness ingredient being not equal to 0. The composition does not contain bitter substances; retains the flavor and nutritional ingredients of fructus momordicae; has rich fruit fragrance and burnt aroma; has a refreshing sweetness and pure taste close to sucrose; has a short sweetness duration and a high sweetness saturation; and integrates the fragrance, sweetness, taste and nutrients of the fructus momordicae. The preparation process is simple, and the cost is low. The composition having mogroside sweetness and flavor may be widely applied to the fields of foods, beverages, dairy products, health-care products, medicines and the like.
