Abstract:
A deboning system for the foreleg portion of meat on the bone is equipped with: clamps for suspending the foreleg portion of the meat on the bone by gripping a tip of the foreshank bone in the foreleg portion of the meat on the bone; at least one foreshank bone cutting device for cutting off the meat around the foreshank bone in the foreleg portion of meat on the bone that is suspended by a clamp; an olecranon cutting device that is disposed along a continuous track, and cuts off the meat around the olecranon in the foreleg portion of the meat on the bone that is suspended by the clamp; and a foreshank bone separation device that is disposed along the continuous track, and pulls so as to separate the foreshank bone and the humerus in the foreleg portion of meat on the bone that is suspended by the clamp. The foreshank bone cutting device has a robot arm disposed along the continuous track, and a foreshank cutter attached to the robot arm. The olecranon cutting device has a pair of olecranon cutters disposed on both sides of the continuous track.
