Abstract:
Provided is a technology for maintaining a flavor demonstrated by a flavoring oil, and preventing the reduction thereof. The edible oil/fat composition according to the present invention contains a flavoring oil, is solidified, and is formed into small pieces. The method for producing an edible oil/fat composition according to this invention includes: mixing a flavoring oil and a solidification oil/fat that is solid at room temperature, when they are in a melted state; and cooling the mixture for solidification and formation into small pieces. The flavor-imparting agent for food according to this invention includes, as an active ingredient, an edible oil/fat composition that contains a flavoring oil and that is solidified and formed into small pieces. The method for imparting a flavor to food according to this invention uses an edible oil/fat composition that contains a flavoring oil and that is solidified and formed into small pieces. The method for maintaining a flavor of a flavoring oil according to this invention includes solidifying the flavoring oil and forming the the flavoring oil into small pieces. By adding this edible oil/fat composition to a food, a food can be obtained in which the flavor of the flavoring oil is maintained.
