Abstract:
[Problem] An egg dry ingredient used in instant foods is commonly manufactured using liquid egg or powdered egg by microwave drying, freeze drying after heat processing, or hot air drying. The high environmental burden of animal-based raw materials such as chicken eggs due to a low conversion ratio from feed is regarded as a problem. Due to allergens and other problems, research and development are being conducted to provide an egg-like processed good without the use of animal-based raw materials. The purpose of the present invention is to provide an egg-like dry composition having a mouthfeel three minutes after pouring that is equal to that of scrambled eggs made using eggs, without including animal-based raw materials. [Solution] The purpose of the present invention can be achieved by an egg-like dry composition free of animal-based raw materials, the composition containing soybean protein, insoluble dietary fiber, and a polysaccharide, the particle size distribution of the composition including 50 mass% or more of particles having a size of 4-16 mm, the polysaccharide being galactomannan and/or sodium alginate, the composition containing 20-50 mass% of soybean protein, 5-15 mass% of insoluble dietary fiber, 0.01-8 mass% of galactomannan, 30-50 mass% of plant-derived carbohydrates, and 5-15 mass% of vegetable oil and fat, the bulk specific gravity being 0.1-0.3 kg/L, the water absorption factor after pouring and reconstitution for 3 minutes being 2-7, the area magnification after pouring and reconstitution for 3 minutes being 1.1-1.8, and the maximum load after pouring and reconstitution for 3 minutes being 350-950 g.
