Abstract:
This flavonoid glycoside degradation method comprises: a hydrothermal treatment step for degrading flavonoid glycosides into flavonoids by performing, in an autoclave, a hydrothermal treatment on a raw material solution containing flavonoid glycosides; and a cooling step for cooling a solution obtained through the hydrothermal treatment performed on the material solution, wherein in the cooling step, the solution is cooled while the pressure inside the autoclave is maintained equal to or more than the saturated vapor pressure of the solution by having a compressed gas introduced into the autoclave.
