Abstract:
Provided are a frozen product minced fish meat of good quality in a granular shape, such as meat minced from a carcass, frozen individually and a method for manufacturing the same. The minced fish meat that is frozen in individual pieces is characterized by including 90% or more by weight of meat granules having a substantially columnar shape and having diameters of 3 - 7 mm and 10% or less by weight of meat granules having short diameters of 2 mm or less. The manufacturing method for minced fish meat that is frozen individually includes the following steps: a) raising the temperature of fish meat frozen at −20°C or less to −10 - −5°C; b) mincing the fish meat while maintaining the fish meat temperature at −10 - −5°C using a meat mincer of a type having a feed screw, plate, and plate knife at a speed of 200 RPM or less for the rotation of the plate knife; c) cooling the minced fish meat to −20°C or less; and d) grinding the minced fish meat, which has been frozen at −20°C or less, in individual pieces.
