Abstract:
This forced water-cooling type fryer is capable of efficiently using water for forced cooling of an oil tank and reducing the amount of water added during cooking, and therefor can be used economically as well as used without water injection in the case of short-time cooking. The fryer is provided with: an oil tank (2) for storing frying oil (1); a heater (3) disposed within the oil tank (2); a water-cooling jacket (4) for cooling the frying oil (1) in a lower part of the oil tank (2b) below the heater (3); and a high-temperature water accumulation tank (6) for storing water, the high-temperature water accumulation tank (6) being disposed above the water-cooling jacket (4), heat-insulated from the oil tank (2), and connected to the water-cooling jacket (4) in a manner that allows water to be freely introduced thereinto.
