Abstract:
This ice ball 1 contains: fruit puree or fruit juice; and a strawberry concentrated fruit juice, wherein the content of the strawberry concentrated fruit juice is at least 0.5% and less than 1% with respect to the fruit puree or fruit juice. Also, this method for producing the ice ball 1 includes an extraction step for heating strawberries to 150-250°C under a high pressure of 1.5-3.0 atmospheric pressure to extract concentrated fruit juice; a mixing step for mixing the extracted concentrated strawberry juice in the extraction step with fruit puree or fruit juice; and a molding step for freezing and molding the mixture mixed in the mixing step.
