Provided are an image processing device, an evaluation system, an image processing program, and an image processing method, for making it possible to automatically and appropriately perform an evaluation of a state of individual granules through use of a hologram in which an image of a plurality of granules framed in an imaging field is captured. This image processing device includes: an acquisition unit for acquiring a hologram in which an image of a plurality of granules framed in an imaging field is captured; a generating unit for generating, from the hologram, phase difference images at mutually different positions in the optical axis direction during capture of the hologram; a specifying unit for specifying a plurality of image ranges in the direction of a plane intersecting with the optical axis direction, which correspond respectively to a plurality of granules, in an averaged image obtained by averaging at least a portion of the phase difference images; and an extraction unit for extracting, for each of the plurality of image ranges, a phase difference image for the center position in the optical axis direction of the corresponding granule.
