Abstract:
[Problem] In an indigestible starch containing 70% or more of dietary fiber, the dietary fiber content increases with an increase in amylase resistance and, as a result, the starch does not swell, which brings about a problem that, when this indigestible starch is used in noodles, the obtained noodles have a hard and coarse texture. [Solution] The indigestible starch according to the present invention is characterized by containing a large amount of dietary fiber but yet having a higher viscosity than conventional dietary fiber-rich starches, more specifically speaking, the viscosity of a slurry containing 30 mass% of the indigestible starch composition measured by the Brabender method being 150-4,000 B.U. As a result, noodles containing the indigestible starch composition as a starting material have not only a reduced caloric value but also a soft texture and an improved palatability.
