Abstract:
Solid fat is further added to noodle starting material in which Durum wheat flour is the principal starting material; and in the noodle-making process, dough obtained by a customary method is subjected to pressure under decreased pressure to make small clumps or a sheet, followed by cutting into elongated noodles, gelatinizing and then hot-air drying. By so doing it is possible to produce instant dried pasta with excellent taste, texture and looseness. With this invention it is possible to offer instant noodles made mainly from Durum wheat (not possible with the prior art), and a method for producing the same.
