Abstract:
The present invention addresses the problem of providing a malic-acid-containing beverage wherein throat irritation caused by acetic acid is alleviated, a refreshing acetic acid tartness is perceived, and an aged apple flavor/aroma is imparted. This problem is solved by a malic-acid-containing beverage that satisfies (a) through (d) below. (a) Acetic acid acidity (α) is 0.20% (w/v) to 1.0% (w/v). (b) 2-methoxy-4-ethylphenol content (x) is 4 μg/L to 50 μg/L. (c) Diethyl succinate content (y) is 60 μg/L to 500 μg/L. (d) y/x is 1 to 15.
