Abstract:
Provided are: a metallic material enabling optimization of response of a fermenting microorganism; a method for controlling response of a fermenting microorganism; and a method for manufacturing a fermented food. The metallic material is configured from crystal grains having an average crystal grain size for controlling response of a fermenting microorganism. Preferably, the average crystal grain size of the crystal grains is from 100 nm to 10 μm inclusive. Preferably, the metallic material is stainless steel. Preferably, the response of the fermenting microorganism is the adsorption or proliferation of the fermenting microorganism on the metallic material.
