Abstract:
The present invention relates to a method for fixing and stabilizing nitrogen oxide metabolites through fermentation of a nitrogen-containing natural product. The method of the present invention has optimized a fermentation condition so as to maximize fermentation efficiency, thereby remarkably increasing the productivity of nitrogen oxide metabolites, and thus, when a fermented natural product in which nitrogen oxide metabolites are fixed by the method of the present invention is ingested, the human body, even without nitric oxide synthetases or with a reduced amount of nitric oxide synthetases, will be assisted in maintaining homeostasis through the activation of vasodilation, neurotransmitters and immune functions, which is the medical effect of nitric oxide.
