Abstract:
A method for improving the yield rate of an Amadori rearrangement product (ARP) on the basis of a mechanism of inhibiting degradation of the ARP by an adduct of a tea polyphenol and deoxyosone. The specific method comprises: dissolving an amino acid, sugar, and a tea polyphenol in water, and adjusting the pH of the mixed solution; placing the obtained mixed solution into a reaction flask, and heating same at a constant water bath temperature to obtain a reaction liquid; and performing a vacuum decompression dehydration reaction on the obtained reaction liquid at a constant temperature, performing cooling by an ice bath after the reaction is completed to terminate the reaction to obtain a solid reaction product, and re-dissolving same in water to obtain an ARP solution. By means of synergistic effects of capturing a primary degradation product of an ARP, i.e., a deoxyosone compound, by a tea polyphenol and performing vacuum decompression dehydration, formation of the ARP is promoted and degradation thereof is inhibited, so that the ARP is massively accumulated and enriched. The method is simple in operations, green, short in reaction time, and mild in conditions, and the yield rate of the obtained ARP can reach 80% or more.
