Abstract:
The invention relates to a method (100) for monitoring and dynamically controlling the toasting of staves (3) during the manufacture of a barrel (2), the staves being assembled in such a way as to form a barrel. The method is implemented by a monitoring system (1). The invention also relates to a system (1) for monitoring and dynamically controlling the toasting of staves during the manufacture of a barrel. The invention also concerns a database (300) comprising a plurality of toasting parameter values associated with organoleptic quality values that can be used to establish a toasting model establishing a correlation between the origin of the wood, the maturation of the wood, the toasting parameters and the aromatic profile of the barrel.
