Abstract:
Disclosed is a method for preparing chitosan using snow crab shells, the method comprising the steps of pretreating the crab shells, decalcifying same with a citric acid solution, extracting organic calcium, decalcifying same again, deproteinizing same by means of enzymolysis, extracting protein powder, preparing chitin, carrying out deacetylation, and decoloring.
