Abstract:
Provided are an oil-in-water Pickering emulsion based on phytosterol stability, and preparation method and application thereof. The water-in-oil Pickering emulsion is prepared by the following method: dispersing phytosterols in absolute ethanol; heating and dissolving to obtain an ethanol solution of phytosterols; then mixing with water and removing ethanol to obtain an aqueous dispersion of phytosterol particles; mixing and homogenizing the aqueous dispersion with the oil phase to obtain a water-in-oil Pickering emulsion; or drying the aqueous dispersion to obtain phytosterol powder, dispersing the phytosterol powder in the oil phase, mixing with water, and obtaining a water-in-oil Pickering emulsion by means of homogenization.
