Abstract:
A method for preparing a slowly digestible starch-containing recombinant instant rice having a low glycemic index uses an amorphous rice power obtained by solid state reaction as a raw material, and combines protease hydrolysis, acetic anhydride esterification and a one-step reactive extrusion technique to obtain a recombinant instant rice containing a high slowly digestible starch content and having a low glycemic index. Also provided is a recombinant instant rice prepared using the above method. The rice is a suitable diet for Type II diabetes patients.
