Abstract:
A method for producing a phospholipid-containing composition that contains phosphatidylserine in an amount of 10 wt% or more relative to the whole weight of the phospholipid-containing composition and has a highly unsaturated fatty acid content of 10 to 40 wt% relative to the total amount of constituent fatty acids, said method comprising steps (1) and (2) and steps (3) and (4) as mentioned below. The method enables a phospholipid-containing composition that contains phosphatidylserine having many highly unsaturated fatty acid molecules bound to position-2 thereof to be supplied at low cost and in a steady manner. Step (1): an esterification reaction between a lysophospholipid and a highly unsaturated fatty acid with phospholipase A2(PLA2) is carried out to produce a phospholipid; step (2): subsequent to step (1), the activity of PLA2 in the phospholipid is reduced to 10 U/g (phospholipid) or less; step (3): a base exchange reaction in a mixture of the phospholipid and serine is carried out in the presence of phospholipase D (PLD) to produce a phospholipid-containing composition that contains phosphatidylserine; and step (4): the composition is separated.
